Step one: Preheat oven to 425 degrees F.
Step two: Line baking sheet with parchment. Place sweet potato slices on the sheet.
Step three: Sprinkle the sweet potato slices with a pinch of salt, ¼ teaspoon cinnamon, and 2 teaspoons brown sugar. Spray the slices with cooking oil.
Step four: Bake at 425 for 15 minutes.
Step five: Top each slice with 2 - 3 mini marshmallows and a walnut if desired.
Step six: Broil 1 ½ minutes, or until marshmallows are toasted.

Step one: Preheat oven to 350° F. Combine cake mix, oats and pie spice.
Step two: In another bowl, beat pumpkin, egg, and oil; stir into dry ingredients just until moistened.
Step three: Use 2 tablespoonfuls of mixture onto baking sheets coated with cooking spray; flatten with the back of a spoon. Bake until edges are golden brown, about 18-20 minutes. Remove to wire racks to cool.
Step four: For frosting, combine confectioners' sugar, orange zest and enough orange juice to achieve desired consistency.
Step five: Spread over cooled cookies.
